What kind of pepper plant can I grow to make pepperoncini?  I would like to can them.

The best peppers for pepperoncini are the roasted varieties. I personally grow the Godfather and the Giant Marconi. Attached are links to each. Seeds are available in many garden centers or through seed companies such as these.
