canning hot peppers


Question
i hope you can help this is my first time canning,,,i love hot peppers,,i have habanero,banana etc, my sister can her peppers in what she calls "cold packing" all she does is slice peppers add the vinegar, water, oregano,basil and garlic,,then boils the lids and after 5 minutes just seals the jars,,my ? is ,,,is this safe ?im not finding anything on line about this method,,,,but she does this every year,,

Dear CINDY,
I have a similar method, but there is more heat involved that what you have described here.  I always blanch my veges.  Peppers, just a few minutes in boiling water, then let them cool, slice or sometimes I leave them whole, into sterile canning jars.  I while I'm bringing to a boil, the water and vinegar mixture with spices, I sterilize the lids.  Pour the hot solution over the peppers, add lids and rings and the jars seal as the solution cools.  Been doing it that way for years.
