freezing hot peppers

QUESTION: hi there, i am wondering if you have ever frozen hot peppers? this is my first year using our garden plot and although we have some peppers i'm not sure if canning them would be worth it. i live in northern michigan and had a pretty good growing for our first year, however i believe we will do better next year. thanks for any info. A.B.

ANSWER: Dear Ali,
I freeze green peppers and love them.  I always can hot peppers though, because even if there are just a few, the vinegar used for the canning is great in chili and beans, because it gets hot, also.  As for freezing peppers, I blanch them 1 minute, then lay them out on waxed paper on a cookie sheet, in the freezer.  Once they've frozen, I put them in a freezer bag and then simply take out what I need and leave the rest frozen for another time.

QUESTION: HELLO THERE, I HAVE ANOTHER QUESTION FOR YOU. I GREW A LOT OF BEAUTIFUL SUNFLOWERS FROM SEED PACKETS. I WOULD LIKE TO USE SOME OF THE SEEDS FOR PLANTING NEXT SEASON. MY HUSBAND WOULD ALSO LIKE ME TO MAKE THEM EATABLE. CAN YOU TELL ME HOW TO DO THIS?

It's been a long time, so I suggest a Google Search, but if I remember correctly.  It seems we oiled a cookie sheet, just enough oil to cover the bottom, placed the seeds on it, salted the seeds and oven roasted them for a couple of hours, turning them a couple of times.  I'm not sure oil is needed, absolutely, but we did use it, just like doing pumpkin seeds.
