Green onions? Chives? Scallions?

Question
What is the difference Between green onions and chives? I thought that they were the same thing. Please help.

Answer
Troy, both onions and chives are in the same allium family, and both are used in cooking to spice foods.  The primary difference is that onions form bulbs that are used as slices, whereas chives are used as an herb used to flavor soups and salads.  They are grown for their top growth, where onions are grown for the root or bulb.

Green onions are onions that are harvested before the bulb matures.  They, like chives, are picked for their top growth or foliage.  The flavor is a little stronger than chives, making it a little too pungent for some people's taste.

The other primary difference is that chives are perennials, meaning they come back year after year.  Onions are annuals and need to be harvested as soon as the top foliage turns brown and falls over.

I hope this answered your question.  Please write again if I can ever be of assistance.

Regards,

Mike
