Leeks & Spring Onions

hi elyse.
i live in Australia so have just enjoyed a prosperous summer vegetable garden. but I am unsure about how i can keep my leeks and spring onions after picking them if I'm not using them all at once?? can i freeze them? and if i refrigerate them will they go funny after a short amount of time?

Kym:

Leeks and onions can be frozen, the leeks will fare better than the onions. They will be fine for cooking, but mushy. Don't defrost before using.

The spring onions can also be pickled, and both can be dried. They won't keep too long in the refrigerator, maybe a week or two for the onions, but the leeks will get limp after a week or so.

You could also cook up a batch of leek and onion soup, or make a leek tart and freeze those items very easily.
