How do I start an avacado plant from the seed in the fruit or can you?

Hi Kelley,
Thanx for your question.  Wash the seed genlty and then about 1/4 inch below the flat base of the seed stick toothpicks 1/3 of the way around until you have stuck three toothpicks in it.  Do this gently and only about 1/2 inch.  Now, suspend the seed (pointed end) into a jar of water (the toothpicks will help suspend the seed in the water.  It usually takes a month or more to see a white root begin to poke out of the tip of the seed in the water.  I would then plant it in a large pot, twice as deep as it is long, in good, moist (not soggy) potting soil.  Keep it damp but not soggy, warm and when it sprouts, it needs lots of light.  If it is not frost-free you'll have to put it under grow lights or put it in an eastern exposure window.  It will get leggy but as soon as it is frost-free, take it outside because it will really benefit from natural sunlight and warm temperatures.  You can also just plant the seed in a large pot without suspending in water.  It will take longer to germinate.  I hope this helps.
