I have a yellow violet that has bloomed all summer.
Now all of a sudden the once beautiful green leaves are all turning yellow.

You say all of the leaves are turning yellow?  I have never really seen or heard of that.

There are several things you can check for:  Has your violet been exposed to cold?  This could definiately do it.  Also, cool or cold water can turn African violet leaves permanently yellowish to white.  Are you continuing to fertilize your violet?  In general, are there are CHANGES you can think of that the plant has gone through recently?
