 Just from what you've said my guess is that your Acanthus spinosus is not getting enough sunlight.  I've found that with some plants that "say" they will tolerate partial shade, it really means that it needs EITHER all morning sun or all afternoon sun.  Transplant them to a sunnier (they will take full sun) area and see how they do!
