green spaghetti squash


Question
I don't know what to do with my green spaghetti squash it is beautiful.  It is a bright green color big and hard.  I picked one and it is getting a lighter green after 2 weeks in a brown bag(still not yellow) the other i left on the vine is getting even bigger and the vine is beginning to die.  They in noway are going to turn yellow.  Can I eat them and what is going on.  Its oct. 16.

Answer
You can try them, but unripe winter squash are usually pretty tasteless. Leave them on the vine for as long as you can, maybe covered with some garden cloth. You don't say where you live, but if the vines are still alive I assume you have not had a hard frost yet. If you are in a frost-free area they may ripen yet. If not, since they aren't going to be good anyway, you might as well leave them until the frost hits. It wont' do much damage to the fruits, but will limit their storage life. The squash will not ripen off the vine.
