Hi John,
As with most tubers, bulbs and rhizomes, you can winter over Callas by taking them out of the soil and storing them so they are kept dry and cool (placed in a paper bag covered in sawdust is one of my favorite ways).  In the spring time, you repot or replant out of doors when all danger of frost has past.  Enjoy your blooms!
