pruning peach and pecan trees

Hello Jim,
    Can you tell me the correct time of year and correct way to prune a peach tree and a pecan tree?

Mature pecan trees are usually not pruned unless you want to cut some of the lower branches that are too low to walk under and in this case they can be removed in the dormant season before leaf out.
