I've developed spider-like webs on some of my plants in my English garden... lemon thyme, ajuga, etc. What should I use to treat?

I am not aware of products for spiders on plants. There is a plant pest called spider mites that make small/delicate webbing primarily in the area where leaves join the stem. If there is any doubt which one you have, snip off a twig and carry to your garden center/nursery.  If the plant looks good otherwise, it may not be a health issue but appearance only.
