Answer
That is a lot of questions. You are thorough :) To save myself from carpel tunnel syndrome, may I suggest visiting http://icwdm.org/handbook/index.asp#rod  click on the various species such as mice and rats that you want to learn more about.

For identification issues, click http://icwdm.org/Inspection/Default.asp  It will take you through a series of questions that will help you identify the problem.

Exterminators do have certain pesticides that aren't available to the public. Plus they have experience. However, homeowners who are willing to educate themselves can do a reasonable job on their own if they truly apply the information carefully and correctly.  Mice need about 1/4 inch gap to squeeze through. I would suggest trapping first and then begin sealing holes. Start sealing with the outside of the house first. Larger holes should not be sealed unless you are certain they are not being used and that you don't have snakes or bats. Trapping animals inside your home is a recipe for trouble. Dont' bother with ultrasonics there is no objective evidence they work in the real world.
Also mice are rarely alone. Think multiples of mice rather than one mouse. I would suggest trapping before applying toxicants to reduce the danger of dead mice odor in the walls. Trapping agressively think dozens of traps for a couple of weeks should suffice and then move to toxicants if you think you should. Toxicants come with risks. So follow label instructions carefully. Many people can resolve mouse problems without toxicants so think carefully before applying them. Be careful with dropping clean up too due to hanta virus. See the site.
