We have an inground pool surounded by cement approx 3 feet wide.  And then the rest is grass. We want to replace the grass with pavers or Kool deck.  Would this look OK?

In my opinion, absolutely!

There are many, many ways to use either or both of those. If you have a chance, stop by your local bookstore or home improvement store and look at the pool and deck books. You can get some wonderful ideas.
