I was wondering how to ripen a cantlope after it is off the vine? Do I put it in a brown paper bag?

You are correct. Any fruit pit in a bag will accelerate ripening as it retains the heat. Most people don't realize that ripening is also a thermal process. The fruit will continue to ripen until it starts to rot.

The flavor may be effected by how long it has been off the vine.
