Butternut and Acorn Squash


Question
This is the first time I have ever tried to grow squash and what a harvest I will have.  Way too much to eat right away.  I have read that storing them in a cool dry place they will last for 3 months.  Would a cooler in the basement be a good choice.  I also read that they are ready to harvest when the vine dies off. They are the correct color and very large already.  Can I harvest them now or should I wait for the vine to die.

If they are the correct color and large, pick one and try it.  I don't wait for the vine to die off completely.  Cool and dry in the basement is good.  If they appear to not be lasting as long as you want, they can even be cooked and frozen and thawed when desired.  They are really still pretty good that way.
