Hi elyse: I am growing lettuce in 4 foot raised beds. They are coming good. When can you start eating lettuce? can you take leaves off and let the plant keep growing? Thank you

If you are growing loose-leaf lettuce you can eat it any time. And yes, you can cut the larger leaves or even all of them, leaving the stem, and they will grow more. If you have seeded heavily, you can even use what you thin out as baby lettuce.

If you are growing head-types however, you should wait for them to form a head, the amount of time will depend on the variety.
