Question
WHY IS IT THAT AZELIAS SOMETIMES WILL START TO LOOK LIKE THEY NEED WATER .OR LOOK WILTED.

Answer
Any time you have Roots are not working right, a plant will start to wilt.

Sometimes the pot is too tight.  The Roots are squeezed together.  Just like when you get into a tight spot and you can't breathe, Roots can't uptake water when they're constricted.

Sometimes the Roots are damaged.  Fertilizer burn will wreck the Root-hairs and stop them from doing the Water Uptake job effectively.  Transplanting almost always results in severe Root damage, no matter how careful you are.  The plant wilts until the Roots have recovered.

Overwatering is the most common mistake people make, and it does plenty of damage to the Roots.  Why?  Roots NEED AIR.  These are cells that must BREATHE just like you and me.  Deprive them of Air, and the tissue is damaged -- BADLY.  Too much water keeps Air from reaching the Roots.  Voila!  Roots die.  Leaves wilt.
