We would like to take the landscape of our yard to more of a Mediterrenean type landscape.  Could you recommend any plants, shrubs and trees, that we could use?

It sounds like you are doing a lot with the landsape.  You should consult with a local landscape designer.  This forum is inadequate for the scale of information you are looking for.  You can also go to the library and do some research on your and find the plants that YOU like,
