best veggies to grow for canning in Hawaii

Question
I am starting a garden in Hawaii in an area that gets lots of rain, on and off.
I would like to stock up on food and would like your advice on the best, fastest
vegetables to grow that can be canned and the best technique for me to study
on the canning process. Thanks so much.  neophyte.

Answer
Dear Christopher,
Green beans and tomatoes just about set the standard for canning.  With a lot of rain, though, I'm not sure about ripening time.  I think the green beans will produce fine, but tomatoes may be slower in ripening.  I've only been to Hawaii twice, and I loved it, but I can't tell you specifically what the gardening is like there.  My best advice, since it is a rather full growing season there, is to decide what you want to eat and produce, and check with a local nursery as to the best way to go about it, as far as abundant rain, timing, heat, etc.  Also, while you are raising produce to can, there are many short growing term items to eat fresh, like spinach, radishes, and many, many lettuces.  Many of those items are about a month and a half from seed to salad bowl.  And living in Hawaii, I'm guessing you could keep them going just about year round.  Fresh, homegrown salads, year round makes me pretty envious!
I wish you much success in your endeavor.
Kind Regards,
Kindred
