Tomatoes – Ripening in Fall/Winter

Q: We have some green tomatoes that we want to ripen. We took some that were still on the vine and put them in a cardboard box with newspaper. Should we store them indoors or outdoors?

A: If they have the faintest bit of red/orange on the blossom end, they have already started the ripening process. You can advance or retard the color change by keeping the tomatoes indoors in warmer or cooler conditions, respectively. Check yours for color and bring out a few for ripening each week. Keep the rest wrapped in newspaper. If the fruit has no color at all now, they are candidates for dusting with cornmeal and a date with a frying pan.
